Roasted Whole Chicken and vegetables

One of last weeks meals I enjoyed! 1 whole chicken 1 bag of carrots 1-2 onions 3 russet potatoes  garlic salt butter Directions First, I preheated my oven to 350 degrees, while that was preheating I cleaned out the chicken. Next, I cut up the potates and onions. When the oven was ready, I put the chicken into a clear glass pan and added the potatoes, onions and baby carrots. Next, I added 2-3 Tbs of butter onto the chicken to cook and garlic onto the vegetables with a little bit of salt. I let this cook for about an hour and a half. I served with a side salad.

Here is a quick and easy breakfast recipe. I whipped this up using what was left in my fridge, you can add anything you want! I used green onions, a touch of onions, yellow and green bell peppers, eggs, milk, jalapenos and leftover ground beef Directions First, brew a cup of coffee.. kidding only if you want to! Since I had leftover ground beef and onions already cut up and cooked, I added this to the skillet on medium low heat to warm them up. Next, I chopped up the rest of the vegetables besides the jalapeno, that was from a jar.  I added the veggies right before the eggs. Crack the eggs into a separate bowl, if you like your eggs fluffy you can add a touch of milk. Whisk together until all the milk and eggs look mixed well. Good ol' fashioned sloppy joes

When I was waiting for the bus after work, my co-worker and I were talking about dinner. She suggested making sloppy joes because it was a cold night. Sloppy joes it was! I know there are a ton of different versions of sloppy joes sauce out there, but because I didn't want to spend a lot of time on dinner, I ended up using a packet of seasoning from the store. This is a quick and easy meal to make if you are short on time as it is simple and yummy!   I bought a little over 2 pounds of ground beef , 2 15. oz cans of tomato sauce, and 2 packets of the sloppy joes seasoning mix.  The back of the package suggests 1 package sloppy joe mix 1 lb. ground beef or turkey 1 6 oz. can tomato paste 1 1/4 C. water 8 hamburger buns Substitute: Use 1 15 oz. can tomato sauce instead of the water and paste Directions ' Brown the meat in a large skillet over medium high. Coq au Vin

The other day I wanted to try a different chicken recipe as I tend to get tired of the same style and seasonings. I am sure that I am not the only one out there who gets caught in a cooking rut. I started by Googling chicken recipes. I found this wonderful thirty minute Coq a Vin dish. I don't always have the time or patience to so spend all night in the kitchen, so this quick meal was just what was needed. Homemade applesauce and apple pie

 I came home this weekend to see my parents and we ended up making applesauce and apple pie with all the apples they got from our apples trees! It smells amazing in here, homemade apple sauce and pie are my favorites. This is what I've been doing all morning with my parents.. Applesauce: My dad and I started by washing the apples, using my parents apple peeler/corer we used 27 apples in our first batch. Here is the start of the sauce. This is all one batch and we have two more on the way! Currently we have the sauce simmering in cinnamon and sugar. Cook all the apples until soft, then mash up any chunks left over, simmer and add cinnamon and sugar to taste. Once you are satisfied, let cool and either package to freeze or enjoy! Turkey Pumpkin Chili

My new years resolution this past year was to try a new recipe every two-three months and I'm very pleased to announce I've kept my resolution. Here is one of my new favorite recipe for the fall,  Turkey Pumpkin Chili. One of the reasons I love this recipe is because it's easy and quick. I have tweaked the recipe to what I had in my kitchen at the time, I will add my suggestions as I go.  I found this recipe at www.hungryhappens.com  2 Tbs olive oil 1 onion chopped 1 green bell pepper, chopped ( I added other kinds like red and yellow) 2 Jalapenos, seeded and minced ( I've used this and also out of the jar) 2 cloves garlic, minced ( I use so much garlic that I bought a huge container of garlic at Costco that is all ready to use. Some projects I've done in the past year..enjoy!

I've been wanting to make a blog for a few months now and finally got the courage to do so.. so here I go! The purpose of this blog is to show my progress with my adventures with cooking, knitting, and any other crafts that I may do in the future.  Here are some knitting projects I've worked on this past year.. I have given away quite a few projects as gifts that aren't in these pictures but I hope you enjoy!  In the upper left photo I have a scarf, fingerless gloves, and boot cuffs.   In the lower left photo I have headbands  ( with and without a bow), a slouchy beanie, and two ear flap hats. In the upper right photo I made my family ear flap hats for their Christmas presents based on the teams and colors they liked!  In lower left photo are smaller crafts like the bird that I may turn it into an ornament and a bow that I may turn into a headband.
