Homemade applesauce and apple pie
I came home this weekend to see my parents and we ended up making applesauce and apple pie with all the apples they got from our apples trees! It smells amazing in here, homemade apple sauce and pie are my favorites. This is what I've been doing all morning with my parents..
Applesauce: My dad and I started by washing the apples, using my parents apple peeler/corer we used 27 apples in our first batch. Here is the start of the sauce.
This is all one batch and we have two more on the way! Currently we have the sauce simmering in cinnamon and sugar. Cook all the apples until soft, then mash up any chunks left over, simmer and add cinnamon and sugar to taste. Once you are satisfied, let cool and either package to freeze or enjoy!

Basic pie crust

21/2 cups all purpose flour
1 tsp salt
dash of sugar
1/2 cup vegetable shortening
1/2 cup cold butter
1 egg
1/4 cup water
1 tbs vinegar

Preheat the oven to 375

Directions
Whisk together the flour, salt and sugar in a medium bowl, with a pastry cutter, cut the shortening and butter into the flour mixture until mixture has the consistency of a course meal ( pea size pieces of butter)

Next, lightly beat the egg and add it to the water and vinegar, add the
water to the dry ingredients, mix until dough comes together.

Separate the dough into two balls, wrap in plastic and chill in fridge
for thirty minutes to let cool. Next take the dough out of the fridge
and roll out one ball at a time into a 12 inch circle. We use foil pie pans because we freeze ours.
Once the dough is rolled out, transfer the dough into the pie pan ( 9 inch pan). Trim the edges and poke the bottom of the crust with a fork several times. Use your favorite apple pie recipe.

After you've added your ingredients to the pie, take the second dough
ball, roll it out to put over the pie. Slice holes for the pie to
breath. Lightly pinch the sides of the dough together.
We use a pie edge protector to make sure our crust doesn't burn. You can use foil if you don't have one. Bake for 25 minutes, then take off the edge protector and cook another 20 minutes until apples are soft. If you wish to freeze your pie and eat later, let them cool to room temperature. Wrap well with saran wrap and foil to prevent freezer burn. When you are ready to eat your pie, preheat oven to 400 degrees and cook for 30 minutes or until warm. This tastes like fresh baked!
