Turkey Pumpkin Chili


My new years resolution this past year was to try a new recipe every two-three months and I'm very pleased to announce I've kept my resolution. Here is one of my new favorite recipe for the fall,  Turkey Pumpkin Chili. One of the reasons I love this recipe is because it's easy and quick. I have tweaked the recipe to what I had in my kitchen at the time, I will add my suggestions as I go.

 2 Tbs olive oil
1 onion chopped
1 green bell pepper, chopped ( I added other kinds like red and yellow)
2 Jalapenos, seeded and minced ( I've used this and also out of the jar)
2 cloves garlic, minced ( I use so much garlic that I bought a huge container of garlic at Costco that is all ready to use. I can't tell you how much that has helped)
1 Lb. ground turkey ( I used the ground turkey from Costco that is a little over 1 lb. you can use any kind of meat you like, I've used ground beef as well)
1 15. oz can fire roasted tomatoes
1 15. oz can pumpkin puree
1 cup. vegetable broth
1 tbs chili powder 
1 tsp ground cumin
1/2 tsp sea salt
1 15. oz Great Northern Beans ( I couldn't find any of these at the stores and the gal who posted this recipe suggested white beans, kidney and black beans)

Really any beans you would like in the chili would do!
I added 1 can of each bean, cannellini, kidney and black beans 


Directions

Heat olive oil on medium high in a large pot, add the onion, bell peppers, jalapenos and garlic. Cook for about 5 minutes, stirring constantly

Add the turkey cook until no longer pink

Once the meat is fully cooked go ahead and add the tomatoes, pumpkin puree, broth, chili powder, cumin, salt, and ground pepper to taste. Bring to a boil, then reduce to simmer , at this point add the beans cover the pot and cook for roughly 30 minutes. Occasionally stir the chili.

This makes about 4-6 servings

The gal who made this recipe suggested to serve with rice or quinoa topped with shredded chesse and or yogurt with a slice of avocado.

I've made this recipe a few times now and I personally didn't used rice or quinoa, I do recommend the avocado, shredded cheese and a little sour cream!
